Course Overview:
The NCI Food Soy Procurement Course focuses on the many aspects of sourcing and purchasing high quality, identity preserved (IP) soybeans for food products, such as tofu, soymilk, miso, natto, tempeh, high protein beverages, desserts and many others. Procurement of food grade soybeans from the U.S. is significantly different from the procurement of bulk commodity soybeans. This course provides training on the important steps in the origination and contracting process. U.S. food grade Soybeans are typically purchased under contract from regional companies that specialize on supplying high quality, IP soybeans, and are shipped to food companies around the world in shipping containers, in 25 kg paper bags, one-ton super-sacks or bulk filled directly into a container. The participants will visit family farms to see food grade soybeans growing in the fields, as well as tour processing and packaging facilities. The course includes lectures from university professors and commodity traders on the contracting process and the risk management tools available to buyers of food grade soybeans. This is an in-person course conducted at the NCI facilities in Fargo, North Dakota, USA.
Objectives:
Learn from experts from both academic and professional traders on how to source, contract and procure food grade soybeans
Visit farms that produce food grade soybeans and see the young 2025 crop as it is growing in the field, and talk with farmers about all they do to produce and market their crops.
Tour processing companies to see how the soybeans are received from the farms, tested for quality, cleaned, packaged, stored and shipped to international customers.
