Course Overview:

This course will offer participants comprehensive training on operating a stone mill. They will gain hands-on experience on the NCI stone mill and have the opportunity to test the flours they produce in the bake labs. By completing this course, participants will become skilled in stone milling, enhancing the value of their products.

Objectives:

  • Know the mill (components, how to utilize, capacity)

  • How to produce the flour desired

  • Physical characterization (particle size, color, etc.)

  • Chemical characterization (gluten and starch quality)

  • Conditioning requirements and methods

  • Flour utilization in product

Major Topics:

1. Stone mill design, machine, and maintenance

2. Stone milling operation, adjustment, safety, and application

3. Grain cleaning, preparation and milling

4. Flour quality evaluation and characterization

5. Application of stone-milled flour

6. Development of bakery products using stone-milled flour

This course is designed for custom millers, farmers or producers thinking about adding value to what they grow, artisan bakers, entrepreneurs and food scientists, recent buyers of stone mills and anyone passionate about traditional milling techniques and sustainable grain processing.
